6 Days Solo

Chad had a work conference this week in Chicago so it was just me and the babe all week long. 
We have really missed him, but still managed to have a pretty fun time by ourselves.  


Monday morning came early thanks to a 6am wake up call through the monitor. This kid cracks me up so much.  Every morning I hear a sweet little voice say "Oh Mommy, where are you, where are you my Mommy??"  Our monitor allows me to talk back to her and if I don't answer soon enough she starts calling for other people, Daddy, Nana, Ash, Ava, Huddy Buddy and Allie Kate are her go-to's.  On the plus side of being up at the crack of dawn we finally made it to Doughnut Joe's before they ran out of goodies!  I had to skip out on the sweetness until after my doctor's appointment though, I had my fasting glucose test, which I passed - whoo-hoo.  Perhaps its the fist fulls of reese's cups or the cans of cake icing I have been devouring that helped me process all that sugar ;)  
Baby Jack is measuring 2 weeks ahead of schedule, which means nothing other than I am gonna have a huge baby, yikes!  He is healthy and growing great though, couldn't ask for anything better.


Tuesday we celebrated Cinco De Mayo with a festive lunch with some of our besties.  I found some balloons and blew them up which provided at least 20 minutes of entertainment so I could prepare for the fiesta.


I kept the menu simple with cheese dip, salsa and chips as sides and chicken quesadillas as the main attraction.




They were a big hit so I thought I would share the recipe :)
4-6 boneless, skinless chicken breast
1 pkg taco seasoning
1 can rotel tomatoes drained
1 cup of your favorite salsa
Add ingredients to crock pot and cook on low for 4 hours, then shred chicken

To make the quesadillas:
I use a griddle pan on the stove
butter the pan, add 1 small (soft taco size) tortilla 
sprinkle cheese ( I used the taco blend cheese with monteray jack and cheddar)
spread chicken over cheese
go ahead and put some more cheese on top now, don't be shy
lay another tortilla on top and let the cheese melt and then flip browning both sides
(continue the process of buttering the pan before each quesadilla you make)

They are super easy to make and you can use the chicken for lots of other dishes too!
We had a really fun play date and the kids really enjoyed playing together and chowing down.


Wednesday I realized that Mother's day is this Sunday and I had nothing bought so we took a trip to the mall and to grab lunch with our bud Lindsey.  Olivia found the fountain and was mesmerized.  The weather this week has been amazing..and HOT!  I can already tell this summer is going to be a doozie in my enlarged state ;)


I had a much needed haircut Thursday morning and by 10:30 am it was already 81 degrees.  I put my freshly blown out locks in a pony tail and we had some fun in the sun.  She thought it was especially funny to splash me with the freezing cold hose pipe water.




 Another 6am morning meant getting out of the house early today.  We packed a bad a headed to see the cousins and to the splash pad for the first time this year.


They all had so much fun and I might have even gotten a little sun on this super pasty skin.  I have a feeling we are going to be there a lot this summer.  With the temperatures climbing close to 90 today it really felt like summer and we loved it!



Now we have nothing to do but anxiously await Daddy's arrival home later tonight!  I have missed him so much and I cannot wait for him to come home. I am sure Olivia is ready for someone other than me to look at too ;)  My hat goes off to all the single mamas out there.  This week has been challenging at the least.  Juggling this big belly and an almost 2 year old all week alone has worn me slap out!  I hope everyone has a very happy weekend and a Happy Mother's Day to all the mommy's out there :)
